🥑 Ingredients (Serves 6)
For the Filling
6 large eggs, hard-boiled and peeled
1 ripe avocado
1 tablespoon Greek yogurt or sour cream
1 teaspoon lemon juice
¼ teaspoon garlic powder
Salt and cracked black pepper, to taste
For the Topping
3 thin slices of prosciutto, cut in half

1️⃣ Crisp the Prosciutto (Stovetop Method)
Heat a nonstick or ceramic skillet over medium-low heat.
Lay the prosciutto slices flat in a single layer — they’ll begin to sizzle softly as the fat renders.
Cook for 1–2 minutes per side, watching closely as the edges curl and turn a warm amber-gold.
Once crisp, transfer to a paper towel-lined plate and let cool completely.
They’ll continue to firm up as they rest, creating the perfect light, crunchy texture.

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Lay the prosciutto slices flat and bake for 8–10 minutes, until deep golden and just beginning to curl.
Cool completely — they’ll crisp beautifully as they rest.
2️⃣ Prepare the Eggs
Slice each boiled egg in half lengthwise.
Carefully remove the yolks and place them in a small mixing bowl.
Arrange the clean egg white halves neatly on a serving plate or marble board.
3️⃣ Make the Filling
Add avocado, Greek yogurt, lemon juice, garlic powder, salt, and pepper to the yolks.
Mash with a fork until smooth and creamy, leave just a hint of texture for that natural, artisan look.
Taste and adjust seasoning until perfectly balanced, creamy, bright, and savory.

Spoon or pipe the filling into each egg white half, forming soft, elegant peaks.
