Creamy Keto Cajun Salmon with Loaded Cauliflower Mash

I wanted something I’d be proud to serve — dishes that looked like culinary masterpieces yet were surprisingly simple to make.
So, I started experimenting. I played with spices, textures, and presentation until my kitchen felt like a mini test kitchen: part art studio, part flavor lab. That’s how KETOLIER was born—a space where we eat rich, feel light, and bring five-star flavor home.
And this dish, my Creamy Cajun Salmon with Loaded Cauliflower Mash, was one of the first that made me realize I didn’t have to choose between healthy and heavenly.
🍳 Ingredients
(Makes 2 servings — approx. 10–13g net carbs per serving)
For the Salmon
2 salmon fillets (6 oz each)
1 tbsp olive oil
1 tsp Cajun seasoning
Salt and pepper to taste
1 tbsp butter for searing
For the Cajun Cream Sauce
1 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
¼ cup grated Parmesan
½–1 tsp Cajun seasoning (to taste)
Pinch smoked paprika (optional)
Salt and pepper to taste
1 cup fresh spinach (optional)
1–2 tsp lemon juice (to brighten)
For the Loaded Cauliflower Mash
1 head cauliflower, chopped
2 tbsp butter
2 tbsp sour cream
¼ cup shredded cheddar
1 tbsp heavy cream
2 slices cooked bacon, crumbled
Salt and pepper to taste
🧈 Instructions
1. Sear the Salmon
Pat the salmon dry — this is key to getting that golden crust.
Brush each fillet with olive oil, then season with Cajun spice, salt, and pepper.
In a skillet, melt butter over medium-high heat. Sear the salmon skin-side down first for 3–4 minutes, then flip for another 2–3.
Once golden and flaky, transfer to a plate.
🪄 Tip: Don’t move the salmon too early. Let it develop that crisp, restaurant-worthy crust on its own.
2. Make the Cajun Cream Sauce
In the same skillet, reduce the heat to medium.
Add minced garlic and sauté until fragrant, about 30 seconds.
Pour in the heavy cream, stirring gently to lift the rich pan drippings.
Add Parmesan and Cajun seasoning, whisking until smooth and creamy.
Season with salt, pepper, and a touch of lemon juice to brighten the flavor.
Add spinach if desired, stirring just until wilted.
3. Create the Loaded Cauliflower Mash
Steam or boil the cauliflower until tender. Drain thoroughly.
Mash with butter, sour cream, and heavy cream until smooth.
Fold in cheddar cheese, salt, and pepper. Top with crispy bacon crumbles.
🪄 Chef’s secret: For an ultra-smooth mash, blend half the cauliflower before folding it back in.
4. Bring It Together
Place a generous scoop of cauliflower mash on your plate.
Top with the salmon fillet and spoon the rich Cajun cream sauce over the top.
Finish with a sprinkle of parsley or a light dusting of paprika.
